I served this one to my kids as a “Gourmet” Turkey Sandwich, and they loved it.
A Brief History Of Turkey Sandwiches
A lady got a really big turkey one year for a Thanksgiving dinner with her family. Once dinner was over, she was left wondering “What the heck am I going to do with all of this turkey?” That’s when her kid asked for a sandwich, and suddenly it all became clear.
The answer? A turkey sandwich of course! *Disclaimer – This is in no way an accurate account of how the turkey sandwich came to be, and I have no idea what I’m talking about.
And now more on “my” turkey sandwich
If you’re anything like me, you’re only just finishing up the turkey leftovers. And also if you’re anything like me, you enjoy the classic post-Thanksgiving turkey sandwich.
I don’t see anything wrong with a pile of cold turkey with some mayo and mustard between a couple slices of bread, but I do like to spruce this classic up a little as well.
We like to serve ham on Thanksgiving for those who aren’t as in to turkey. So it seemed natural to add the ham in there as well. I think the ham does wonder for this hot sandwich, and if you don’t have leftover ham, the lunch meat stuff is great for it too! Of course, you can always just leave the ham out all together, this is your sandwich afterall.
So to start with this sandwich you’ll want the following:
INGREDIENTS
Your favorite sandwich bread
Mayonnaise
Mustard
Shredded turkey
Cranberry sauce
Sliced ham
Shredded cheddar cheese
Fresh Spinach Leaves
How It’s Made
Get a non-stick pan heating on medium-low heat. *It’s important that the heat not be too high, as you’ll be assembling the sandwich as it cooks, and I wouldn’t want your food to burn.
So for this sandwich I mixed the mayo and mustard beforehand, but you do whatever works best for you. I always use butter for grilled cheese, but for hot sandwiches like this, I like to use mayo in place of the butter.
So the first thing you’ll do is spread mayonnaise and mustard on one side of your bread, and place it on your pan. Then you’ll carefully spread more mayonnaise and mustard on the other side. sprinkle some cheddar cheese on top of the mayo-mustard.
Next you’ll want to get some sliced ham on your bread. I like to heat it up a little in the pan before it goes on the sandwich.
Then it’s time for your turkey. I find that white meat makes the best sandwiches. But I do like to get a little dark meat in there too, since it’s a little more moist.
After you’ve got your turkey spread out nicely, you’ll spread some cranberry sauce over the meat. I like the whole berry style sauce, and it’s wonderful for this sandwich to get those berries in there.
You’ll want to sprinkle some more cheddar cheese on at this point, to help keep bind the next set of ingredients.
If you want more ham, this is the time to add a second slice, otherwise, move on to the spinach. Don’t be shy with this green goodness, it wilts as it heats, so you can add more than you think.
This is where you sprinkle the last bit of cheddar, get as much of the yummy stuff as you want.
Of course you’ll want to spread mayonnaise and mustard on the second slice of bread, and then top your sandwich.
By the time you’re finished assembling, the sandwich should be ready to flip. Just take a quick peek underneath, and if it’s nice and golden, you’re good to go. *Bigger sandwiches like this can be a bit of a pain to flip, so be careful.
Once the other side of your sandwich is a beautiful gold, you’re ready to enjoy!
If you like to cut your sandwich, I’m curious how you do it. I personally think all sandwiches ought to be cut in triangles (as pictured). But this is a surprisingly hot topic around my house. Comment and let me know what you think!

This sounds so tasty. I bet it would also be great with a sourdough bread.
I’ll have to try that!
